The Philippine cuisine is influenced by a number of indigenous and foreign cultures, including the cuisine of the early Malay settlers, Arab and Chinese traders, American colonizers, and other Oriental and Occidental accents and flavors. The strongest influence is that of Spain’s. Spaniards colonized the Philippines for almost 400 years, hence the strongest influence in the Filipino cuisine. Food historians claim that most of the Philippine dishes are of Spanish origin (Source: filipinokastila.tripod.com).
